My passion is in baking.  I had my own bakery in New  York City for 3 years. I am  now offering my baking  skills again in Nebraska, and to  new customers that I know  will love my desserts and  keep coming back for more!

Alotta Brownies is a full line gourmet bakery located in the Historic Downtown district of Fremont, Nebraska. We have been open since June of 2008 after we first began in Arlington, Nebraska. Realizing that in order to meet the demands of our growing clientele we would quickly need additional production space. We moved operations to Fremont in February of 2009 where we utilized the old Vienna Bakery space at 317 N. Main Street in downtown Fremont. The bakery features antique ceilings and a fun, bright, colorful, whimsical decor that makes for a relaxing, enjoyable experience. Our friendly staff provide quick service with a smile. Our goal is to treat you like family.

Michelle has been baking professionally for 25 years. She started in New York City where she attended the New York Culinary School. After receiving her certification she interned with a French pastry chef and worked for several different well known restaurants, like the Silver Palate, where she baked cakes for the likes of Mary Tyler Moore and Madonna. Madonna really liked her carrot cake. After working for different restaurants Michelle decided to start her own small wholesale bakery known as Michelle's Muffins and More and after three successful years she decided it was time to move back to Nebraska to raise her two growing children. After returning to her home state, she worked in a few different jobs, catering manager for The Garden Cafe in Grand Island, and Bakery Manager for No Frills Grocery Stores in Omaha and Blair, Nebraska. Running the bakery is a real family affair with Michelle covering the day to day operations, baking, marketing and managing the kitchen. Her husband Jess doing purchasing, repair and upkeep, and managing the office. Christian (16 years old) assisting the bakers and performing basic decorating and baking jobs. And Kathryne (6 years old), who is our advertising spokes girl and does a lot of taste testing and photos of her eating giant cookies for our advertising.

Our menu has had many items added over the period of timesince we first opened. Our emphasis was on cinnamon rolls and a variety of brownies, bars and cookies, it has expanded greatly with fantastically flavorful fancy desserts of all kinds, specially decorated birthday cakes special occasion cakes, custom designed wedding cakes, chocolate tortes, French gateaus, a variety of cheesecakes, cookies, Italian cannolis, pecan sticky rolls, plain cinnamon rolls, peanut butter cinnamon rolls, and cupcakes for any occasion. We also offer a select variety of artisan breads, challah twist, honey oatmeal, multi-grain, onion, jalapeno cheese, focaccia, jewish rye, pumpernickle, cinnamon raisin, sourdough, flaxseed, sunflower seed and marble rye twist. We offer pies baked fresh to order along with dinner rolls and butter horns. The pies include the classics like apple, cherry, blueberry, peach, sour cream raisin, pumpkin and chocolate pecan.
